Aparna’s Exam Jubilance Recipe…
For 4 to 6 people
1 can of Italian tomatoes
2 teaspoons of oil
1 medium onion, chopped
1 celery (one bar)
1 medium carrot, chopped
2 teaspoon fresh parsley
1 teaspoon red wine vinegar
3 table spoons white wine
salt and pepper
75 g walnuts, chopped
500 g Tagliatelle
4 table spoons of parmesan cheese
Heat 1 teaspoon of oil in a large pan. Put onions
and celery in with stir under low heat for 5 minutes.
Add tomatoes, parsley, vinegar and wine. Boil up,
reduce heat and cook for 10 to 15 minutes. If you
use fresh tomatoes you cook for up to 25 minutes.
Add salt and pepper to taste.
In the meantime, heat 1 tsp. of oil in another pan
and roast the walnuts for 5 minutes with low heat.
Then add them to the sauce.
Boil the pasta as usual in salt water. When done
serve with the sauce and parmesan cheesse.
